Chicken Waldorf Salad
Special thanks to: LA, Coloma, MI Servings: 8 Directions: 4 chicken breast halves w/bone and skin Sprinkle with Lawry's Season Salt and bake until done Cool and remove skin and chicken from bone, cut into bite size pieces Place in bowl Add 4 stalks celery chopped 2 Apples of your choice, chopped with or without peel 1 small can pineapple tidbits in juice, drained, reserving juice 2 cups seedless grapes, halved 1 cup Surratt Farms Pecan Pieces, toasted 3/4 cup Miracle Whip Light thinned w/a little pineapplejuice from the tidbits Mix all together, chill for 1 hour and enjoy. Very light and satisfying. Special Notes: This is really good served with zucchini muffins (I put crushed pineapple in mine for extra moisture) or muffins of your choice.
